Menudo is a spicy Mexican soup made from beef tripe, simmered in a small amount of liquid with a generous dose of red pepper and other spices. Menudo typically takes several hours to prepare and is traditionally prepared for major celebrations and weddings, or more specifically, the day after the celebration, when this invigorating stew is served as an effective hangover cure. Menudo is poured into deep bowls and eaten with corn tortillas. You can drizzle with lime juice, sprinkle with fresh cilantro, or top it with salsa. This recipe comes courtesy of a Mexican restaurant in San Antonio.

1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 450 g beef tripe, cut into small squares
- 3 fresh cloves of garlic, crushed
- 3 teaspoons of salt
- 0.5 cup red chili powder
- 2 teaspoons oregano leaves
- 1 tbsp. coarsely ground black pepper
- 1 tsp cumin powder
- Half a small onion, chopped
- 1 small can hominy corn, yellow or white

Cooking the dish according to the recipe:
- Place the beef tripe in a pot of boiling water, just enough to cover the tripe. Add the garlic, onion, and salt. Cover and simmer for about 1 hour.
- Once the tripe is tender, add the remaining ingredients, including the hominy, and simmer for another 15-20 minutes. Add more salt if needed. This spicy dish pairs well with cilantro and lime wedges. Serve with corn tortillas.
