For Iranians, sabzi khordan (a bowl of greens) is a refreshing addition to any meal. It's served as a standalone appetizer or as a side dish to a main course. The types of greens used can vary depending on preference, season, and market availability, but in Iran, the most common options are mint, basil, and watercress, which can be substituted with arugula. This herb dish is also popular in Armenian, Azerbaijani, and Kurdish cuisines.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 220 g feta (1 pack)
  • 0.5 tsp caraway seeds
  • 1 cup walnuts
  • 60 gr. arugula (2 tbsp.)
  • 1 bunch fresh cilantro (60g), trim ends but leave stems on
  • 1 bunch of fresh parsley (60 g)
  • 1 bunch of fresh mint (60 g)
  • 1 bunch fresh basil (115 g)
  • Half a bunch of fresh dill (30 g)
  • Half a bunch of fresh tarragon (30 g)
  • 8 green onions, trim the roots and cut the onions into 10 cm pieces.
  • 8 radishes, cut in half (large ones – into quarters)
  • Bread, such as barbari or lavash

Cooking the dish according to the recipe:


  1. Place the feta in the center of the plate and sprinkle with cumin. Arrange the walnuts on either side of the plate. Arrange the arugula, cilantro, parsley, mint, basil, dill, tarragon, and green onions on the plate, followed by the radishes, ensuring each ingredient is evenly distributed across the plate so that each guest can easily grab one.
  2. Serve with bread. Tear off a piece of bread, spread some feta cheese on it, sprinkle with walnuts, and top with any other ingredients you like.
