Chicken Nuggets: Good Meat, Poorly Processed

White meat is healthier than red meat. It's used in chicken nuggets. What can we say about them? Are they really a healthy snack between meals?

A serving of five or six chicken nuggets is comparable to a small hamburger. They contain almost equal amounts of protein and cholesterol-boosting fat. However, nuggets contain fewer calories. The amount of sodium in them can vary. Some have less, some more. Generally, the more seasonings, the more sodium.

Although nuggets are made from chicken, they're noticeably inferior to home-baked or fried chicken. This is because they can contain not only meat but also several types of flour, starch, skin, lard, and vegetable oil. All of this adds calories and saturated trans fats.

If you prefer lean chicken, consider grilled chicken breast sandwiches instead of nuggets. They'll have half the saturated trans fat. However, the bun won't reduce the calories or sodium.

Don't think that cooking frozen chicken nuggets is healthy. Most of the fat and sodium are found in the ground meat and breading, and deep-frying doesn't reduce them. Modern cookbooks and websites suggest using crushed cornflakes in recipes instead of traditional breadcrumbs. Cornflakes are also quite high in calories. The upside is that they have more protein and less fat, cholesterol, and sodium, provided you don't add salt or other additives.

Another breading option is soy flour. Nuggets coated in soy flour before frying will have fewer calories and fat, but the protein and sodium levels are the same as store-bought nuggets.

It's difficult to compare the nutritional value of chicken nuggets, regardless of their ingredients. It's important to consider the nutritional value of not only the meat but also the other ingredients in the dish. If nuggets are served with very salty French fries, pasta, or cheese, they will contain more unhealthy fats, calories, and sodium. If they are served with a salad, baked vegetables or potatoes, fresh fruit, or whole-grain bread, the calories, fat, and sodium will be significantly lower.
