In a large bowl, combine 3 tablespoons olive oil with 1 tablespoon lemon juice and soy sauce. Add 1 bunch trimmed watercress, 110 g thinly sliced button mushrooms, and 2 sliced avocados; season with salt and pepper to taste and toss gently. Top with canned fried onion rings.
