Star-shaped pasta and green pea soup is a favorite with kids, and you can't go wrong with it: delicious, quick, and warming. Start with the sautéed carrots, onions, and celery, then pour in the chicken broth and the remaining ingredients. For a rich flavor, simmer the soup with a Parmesan rind, then tip it out when serving. It should be a natural rind, not a waxy coating. Serve topped with grated Parmesan and a squeeze of lemon juice.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 1 tbsp extra-virgin olive oil
  • 1 stalk celery, finely chopped
  • 1 carrot, finely chopped
  • 2 shallots, chopped
  • 3 sprigs of thyme
  • Parmesan rind 5 cm long.
  • 1 liter of chicken broth
  • 1 and 1/4 cups star macaroni
  • 1 cup frozen green peas, thawed

Cooking the dish according to the recipe:

  1. Place a medium saucepan over medium heat. Add the olive oil, celery, carrots, and shallots and cook, stirring frequently, for about 5 minutes or until softened.
  2. Add thyme, 1/4 teaspoon salt, Parmesan rind, chicken broth, and 1 cup water. Bring to a boil and simmer for 10 minutes.

  3. Add the pasta and stir with a wooden spoon to prevent it from sticking to the bottom of the pan. Bring to a simmer again and cook for another 8-10 minutes, or until the pasta is tender.
  4. Remove the thyme sprigs and Parmesan rind. Stir in the peas. Ladle the soup into bowls and sprinkle with grated Parmesan and lemon zest.
