How to Make Tapenade

Tapenade is a Provençal condiment made with olives, capers, and anchovies, typically served as a spread on baguette slices or crackers. It takes just a few minutes to prepare. Simply blend all the ingredients together and serve immediately. For a richer flavor, use different olive varieties. Anchovies will enhance the flavor, while lemon adds a refreshing citrus note. Tapenade can be served as a spread, such as on crostini, or as a sauce, such as with chicken or meat.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 220 g mixed pitted olives
  • 2 anchovy fillets, rinsed
  • 1 small clove of garlic, crushed
  • 2 tbsp capers
  • 2 - 3 fresh basil leaves
  • 1 tbsp. freshly squeezed lemon juice
  • 2 tablespoons extra-virgin olive oil

Cooking the dish according to the recipe:


  1. Rinse the olives thoroughly under cool water. Place all ingredients in the bowl of a food processor. Process, stopping to scrape down the sides of the bowl, until everything forms a chunky paste, about 1-2 minutes total. Transfer the tapenade to the bowl and serve.
    Exit: 1.5 tbsp.
