French onion cream soup - detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/4 cup (60 g) butter
  • 3 cups (300 g) onions, quartered and sliced
  • 375 ml of water
  • 1.5 tbsp dry chicken broth
  • 1/4 cup (30 g) flour
  • 430 ml of milk
  • 3/4 tbsp. (100 gr.) grated mozzarella or suluguni cheese
  • 3/4 cup (100 g) grated Swiss cheese
  • Salt and pepper to taste

To make creamy croutons:

  • 1.5 cups (80 g) bread, diced
  • 3 tablespoons melted butter

Cooking the dish according to the recipe:


  1. Melt the butter in a saucepan and sauté the onion for 10 minutes. Add water and dry chicken broth and bring to a boil. Cover and simmer for 15 minutes.
  2. Separately, mix the flour and milk and add to the saucepan. Whisk over medium heat until the mixture thickens. Remove from heat.

  3. Mix both types of cheese and add half to the soup. Stir until the cheese melts. Add salt and pepper to taste.
  4. Preheat the oven. Pour into ceramic cups, add the creamy croutons, and sprinkle the remaining cheese mixture on top. Bake in the oven until the cheese is melted. Serve.
  5. Creamy croutons:
    Toss the bread cubes with melted butter. Bake in the oven at 180°C for 10–15 minutes, turning occasionally.
