Cooking the dish according to the recipe:
- In a saucepan over medium heat, sauté the onion and sugar in butter for 10 minutes, stirring constantly. Continue stirring, add the flour and sauté for another 3 minutes. Then add the beef broth, red wine, and salt and pepper to taste. Bring to a boil, cover, and simmer for 20 minutes.
- Pour the soup into ceramic bowls, place a slice of bread on top and sprinkle with Emmental cheese.
- Place in the oven under the grill and bake until the cheese is melted. Serve hot.
