Red mullet, purchase and preparation

Red mullet, or sultanka, is a light pink marine fish with white flesh and a delicate aroma. There are several species of red mullet.
This fish is sold whole or in fillet form at the market and in stores.

To ensure the best shelf life of red mullet, buy it between May and November. However, it should only be stored frozen. Fresh fish should be consumed on the day of purchase.
Preparation
Red mullet liver has a somewhat creamy texture, similar to chicken liver. Considered a delicacy, it's left on when gutting, not removed.
Red mullet is usually fried, grilled or steamed.

This fish is very popular in France, as well as in all Mediterranean countries.
