Raspberries, beneficial properties, cooking methods

This berry comes in a variety of colors around the world—purple, black, and yellow—but in our country, the most famous variety is the red raspberry. It's typically harvested only in June and July, so we should enjoy this delicious treat while it's available.
Purchase
Choose fully ripe berries without stems. Ideally, they should be plump, firm, and dry.
Storage
Raspberries spoil very quickly, so they need to be stored very carefully. Remove any soft or moldy berries and place the rest in a container or bowl covered with a paper towel. Store in a cool, dark place or in the refrigerator for up to two days.
Beneficial properties
Thanks to their large seed content, raspberries are an excellent source of dietary fiber. The berries' color comes from anthocyanins. They also contain compounds called ellagitannins. Research has shown that these substances are highly beneficial for human health.
Cooking methods
Some argue that the best way to enjoy raspberries is simply to eat them fresh. However, there are several delicious alternatives worth trying:
- make raspberry sauce for salad dressing by mixing wine vinegar, olive oil, raspberries, Dijon mustard, salt and pepper;
- Mix raspberries with banana and freeze the mixture - you will get a simply fabulous fruit ice cream.
- make jam from soft raspberries, and you can enjoy their aroma all year round;
Raspberries are wonderful in salads. Try mixing fresh berries with baby spinach, red onion, walnuts, and blue cheese. Dress everything with raspberry sauce.
