Avocado: properties, varieties, and culinary uses

Although considered a fruit, avocados are used in cooking as vegetables. Avocados are native to Central America. There are four main species: Hass (considered the best, has a dark, rough skin), Ettinger (pear-shaped, with smooth skin), Fuerte (small size) and Nabal (round shape).
Avocados are often called butter pears for their oily flesh, and alligator pears (Hass pears) for their rough skin. Avocados are highly nutritious, containing vitamin E, iron, potassium, and niacin. They are also distinguished from other fruits by their high content of monounsaturated fats, which are considered very healthy.
How to choose an avocado?
Avocados are sold year-round in grocery stores and supermarkets. When purchasing, choose fruits with undamaged skin and flesh. They should be yielding to pressure, but not soft. If you buy a fruit that's too hard, you can ripen it quickly at home. To do this, place it in a brown paper bag along with banana, then put the bag in the refrigerator.
Avocado processing
Avocados should be cut with a thin, sharp knife. Run the knife around the entire fruit, making sure the tip touches the pit. Grasp both halves and twist them in opposite directions. It's easier to remove the pit with a spoon or the same knife. Avocado flesh quickly discolors when exposed to air. To prevent this, sprinkle it with lemon juice.
Storing avocados
Ripe fruits should be stored in the refrigerator.
Cooking Avocado
Avocados are best eaten raw, without cooking. Halve the fruit and remove the pit. Drizzle the pit with a little olive oil and balsamic vinegar and fill with shrimp cocktail.
You can make a puree from avocado pulp, tomatoes, garlic and chili pepper, then you will get a classic Mexican guacamole sauce.
To make the Italian tricolor salad, thinly slice the avocado and tomatoes, add mozzarella cheese and olive oil.
