Next time you fire up the grill, throw a few avocado wedges on the grate. You'll be amazed at the wonderful, deep, smoky flavor they'll develop. It's the perfect picnic appetizer—hearty, healthy, and unique. Your guests will love it! Drizzle the grilled avocado wedges with a balsamic vinaigrette and serve as an appetizer while your meat is grilling, or as a side dish with grilled meat.

Recipe:


Quarter 6 firm avocados; season with salt and pepper and brush with grapeseed oil. Grill over medium-high heat, turning, until grill marks appear, about 3 minutes.

In a blender, combine 3 tablespoons balsamic vinegar, 1 teaspoon Dijon mustard, 1/4 cup fresh parsley, 3 cloves garlic (peeled and quartered), 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Blend. With the blender running, add 6 tablespoons olive oil and blend until smooth.

Drizzle the dressing over the avocado and sprinkle with additional parsley.
