Sweet, plump prunes are not only healthy but also make a delicious dessert. To make prune truffles, you don't have to grind them and mold them into candies. Insert an almond into each cut prune, then dip the prunes in melted chocolate and roll them in crushed freeze-dried raspberries. Once the chocolate has set, these healthy candies are ready to eat. Or, store them in the refrigerator. They are also delicious chilled. Using this recipe as a base, you can experiment with different types of nuts and chocolate.

Cooking the dish according to the recipe:
- Insert a whole almond into the pit of each prune. Close the prune so that the almonds are inside (it's okay if some are sticking out). Place the prunes on a waxed paper-lined baking sheet and refrigerate for 30 minutes.
- Place the raspberries in a sealable plastic bag and crush them into a fine powder. Pour the powder into a small, shallow bowl.
- Place the chocolate in a small microwave-safe bowl. Microwave at 70% power for 1 minute. Remove from the microwave; the chocolate will still look firm, but will be softer to the touch. Stir until smooth.
- Dip one end of a prune into the chocolate, letting any excess drip back into the bowl, and then roll the chocolate end in crushed raspberries to seal. Place the prune back on the baking sheet with the almond-side down and repeat with the remaining prunes. Let sit for about 15 minutes, until the chocolate has set.
