These low-carb candies are made with dates, which impart all their natural sweetness and a pleasant toffee flavor even without the addition of milk or sugar. The dates are simmered in water and then mixed with peanut butter, honey, cocoa powder, crushed graham crackers, and oatmeal. The mixture is formed into balls that can be decorated with any toppings of your choice: coconut flakes, crushed graham crackers, granola, or chopped peanuts. These handmade sweets are not only healthy and delicious, but also look very elegant. They can even be beautifully boxed and given as a gift.
The recipes use measuring containers with the following volumes:

Ingredients for the recipe:
- 1 cup dried pitted dates, 120g, finely chopped
- 1 cup of water
- 1 tbsp. freshly squeezed lemon juice
- 2 tablespoons honey or agave syrup
- 2 tbsp. natural peanut butter low fat
- 2 tbsp cocoa powder
- 1 tbsp (15 g) butter
- 1/4 teaspoon salt
- 8 records whole grain graham crackers, chopped, about 1 and 1/4 cups.
- 0.5 cups oatmeal, not instant

Cooking the dish according to the recipe:
- In a medium saucepan, combine the dates, water, and lemon juice. Cook over medium heat, breaking up any large date pieces with a spoon, until the mixture forms a thick paste, 15-20 minutes. Stir in the honey, peanut butter, cocoa powder, and salt. Add the crackers and oats. Remove from the heat.
- Lightly spray a baking sheet with cooking spray. Using a tablespoon, drop equal amounts of cookie mixture onto the baking sheet. Refrigerate until set, about 20 minutes.
- Topping: unsweetened coconut flakes, crushed graham crackers, finely chopped peanuts, granola (0.5 cups of each).
Place desired toppings in small bowls. Roll each cookie in the desired toppings and flatten lightly to form thick disks. Cover and refrigerate. Serve chilled.
