An unusual and delicious salad can be made from ordinary carrots, packed with not only vitamins but also contrasting flavors and textures. For a more aesthetically pleasing look, the carrots are sliced into thin ribbons, which can be done with a vegetable peeler or a mandoline, if you have one. All ingredients are combined in a bowl with a tart-sweet dressing of honey, olive oil, and lime juice. Finely chopped dates perfectly complement the carrots with their light caramel flavor, and soft, salty feta cheese provides an interesting contrast against their sweetness. Fresh cilantro is a must-have ingredient for this salad; it adds a bright, spicy flavor and aroma, completing the dish. This salad pairs harmoniously with meat dishes.

- 1.5 tbsp. l. olive oil
- 2 teaspoons of honey
- Juice of 1 lime
- 1/4 cup crumbled feta
- 2 tbsp chopped toasted almonds
- 2 tbsp finely chopped dates

Cooking the dish according to the recipe:
- Using a vegetable peeler or mandoline, slice the carrots into thin ribbons. Soak them in ice water until the ribbons are firm and curled, about 15 minutes. Drain and pat dry.
- Combine cilantro, olive oil, honey, 0.5 teaspoon salt, and lime juice in a bowl. Add the carrots along with the feta cheese, almonds, and dates and toss to distribute the ingredients evenly. Serve immediately or let the salad sit for a while before serving.
