Handmade chocolates are delicious, healthy, and always a hit, especially when you combine chocolate and goat cheese in one. The dessert is moderately sweet, with a slight cheesy tartness—just like miniature chocolate cheesecakes! Soft goat cheese is whipped with powdered sugar and vanilla extract and mixed with dark chocolate melted in a double boiler. Once the mixture has set and becomes pliable, roll it into balls. To make them look like real chocolate truffles, roll them in cocoa powder.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- 170 g dark chocolate, chopped
- 170 g fresh (soft) goat cheese, room temperature
- 1/4 cup powdered sugar
- 0.5 tsp vanilla extract
- 1/4 cup cocoa powder with sugar, sifted

Cooking the dish according to the recipe:
- In the top of a double boiler or in a metal bowl set over a pan of simmering water (make sure the water doesn't touch the bowl), melt the chocolate, stirring until smooth. Set the melted chocolate aside for a few minutes to cool while you prepare the remaining ingredients.
- In a bowl, beat the goat cheese with the sugar and vanilla extract until light and fluffy. Stir in the melted chocolate until smooth. Cover and refrigerate until set, at least 1 hour.
- To form trufflesTake 1 heaping teaspoon of the chocolate-cheese mixture and lightly roll it into a ball with your hands. Roll the finished truffles in sifted cocoa powder, place them on a baking sheet lined with waxed paper, and refrigerate for about 30 minutes to firm up.
