These delicious white chocolate truffles will delight you with all the flavors and textures of American key lime pie. The delicate candy is infused with the refreshing aroma of real lime and topped with a thick layer of contrasting, crunchy graham cracker crumbs. Refrigerate until the truffles are completely set, then enjoy!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.

1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/4 cup heavy cream
  • 1/4 cup sweetened condensed milk
  • Zest of 3 limes
  • 2 cups (about 300 g) white chocolate chips
  • Juice of 2 limes (about 2 tablespoons)
  • 1 tablespoon unsalted butter, room temperature
  • 5 whole graham crackers, crushed (about 1 cup)

Cooking the dish according to the recipe:


  1. Combine heavy cream, condensed milk, and lime zest in a small saucepan over medium heat. Heat until the mixture just begins to simmer, about 4 minutes. Remove from heat and let the lime zest steep in the cream for 20 minutes.
  2. Return the cream to medium heat and heat until just barely simmering, about 3 minutes.

  3. Place the white chocolate in a medium microwave-safe bowl. Pour the hot cream over the chocolate and let it sit for 2 minutes. Stir until smooth; if there are lumps, microwave the mixture in 15-second intervals, stirring until smooth.
  4. Add lime juice. Add butter. Cover with plastic wrap, placing it directly on the surface of the ganache. Refrigerate until the ganache hardens, about 2.5-3 hours.
  5. Line a baking sheet with parchment paper. Place crushed graham crackers on a plate. Scoop 1 tablespoon of ganache and form it into a ball with your hands. Roll the ball in the graham cracker crumbs to coat completely, then place it on the prepared baking sheet. Repeat with the remaining ganache.
  6. Refrigerate the truffles until ready to serve.
