Viennese waffles
Start with the batter to make perfect wafflesIn a large bowl, whisk together 2 cups flour, 1/4 cup sugar, 2 teaspoons baking powder, 1/2 teaspoon salt, and 1/4 teaspoon baking soda. In a separate bowl, whisk together 1 1/2 cups milk, 6 ounces chilled melted butter, and 2 eggs; pour into the flour mixture and mix until smooth. Preheat a waffle iron; lightly grease the iron, then fill it three-quarters of the way with batter and cook until the waffles are golden.
Chocolate ice cream with peanut sauce
Microwave a small bowl with 1/2 cup peanut butter for 30 seconds to 1 minute. Serve with chocolate ice cream and whipped cream.
Caramelized bananas and bacon
Fry 3 slices chopped bacon in a skillet until crisp. Add 3 sliced bananas and 1/3 cup light brown sugar; cook until caramelized. Add 1/4 cup water and 2 tablespoons rum (optional); cook for 1 more minute.
Coconut sauce and ginger
Heat 1 cup coconut cream in a small saucepan over low heat. Serve with chopped salted almonds and crystallized ginger.
Grape and pear sauce
In a saucepan, combine 2 sliced pears and 1 1/2 cups seeded red grapes with 1 cup water and 1/3 cup sugar; cook until softened and syrupy, about 25 minutes. Stir in 2 tablespoons (30 g) butter and 1 teaspoon vanilla.
Brown butter with oranges
Over a bowl, peel 2 oranges, reserving the juice. Heat 110g of butter in a frying pan over medium heat for about 6 minutes, or until browned. Add the orange slices, orange juice, and 1/4 teaspoon vanilla; serve warm.
Cardamom syrup
Heat 1 cup maple syrup in a small saucepan over low heat with 6 strips lemon zest and 3/4 teaspoon cardamom.
