Mini Polenta Pizzas

These mini pizzas are perfect for appetizers at house parties or just as a quick snack. Kids will especially love them. The bases for these mini pizzas are circles of prepared polenta. No dough required! Just spread with tomato sauce and sprinkle with grated cheese. You can add any toppings you have on hand, such as slices of sausage, ham, or vegetables. Toast the mini pizzas in the oven, and once the cheese has melted, you're ready to eat. A delicious snack in just ten minutes.


Ingredients:

  • 8 slices of prepared polenta, 1 cm thick (sold in tubes)
  • 1 teaspoon olive oil
  • 0.5 tbsp. store-bought low-fat marinara sauce
  • 0.5 tbsp. grated mozzarella
  • Other toppings as desired (chopped vegetables, chicken sausages, diced ham)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to broil. Brush the polenta on both sides with olive oil and place the discs on a foil-lined baking sheet. Grill until golden brown, about 1 minute (watch the polenta carefully to prevent burning).
  • Step 2
  • Turn the polenta discs over, brush each with about 1 tablespoon of marinara sauce, then sprinkle with mozzarella and other toppings, if desired. Grill until the cheese is golden and bubbly, about 1 minute more. Let cool for a few minutes and serve.
