A convenient individual pizza can be baked on half an English muffin. Sunny Anderson suggests preparing the ingredients—separate mini pizza bases and toppings—and storing them in the freezer so you can grab the required amount at any time and cook quickly.

We recommend

Preparation:

    Step 1
  • Divide and spread the pizza sauce between the English muffin halves. Top each with an even layer of mozzarella.
  • Step 2
  • Line a baking sheet with parchment paper and arrange the muffin halves side by side in a row at one end. Arrange the pepperoni, peppers and onions, bacon, ham, and pineapple in separate rows in a single layer next to the muffins. Sprinkle with oregano. Freeze, uncovered, until the muffins are firm, 1 to 2 hours.
  • Step 3
  • Wrap each English muffin half tightly in plastic wrap and place in freezer bags. Transfer the toppings to separate freezer bags. Freeze the muffins and toppings until ready to use.
  • Step 4
  • When ready to bake the pizza, preheat the oven or toaster to 200°C (400°F). Remove as many English muffin halves from the freezer as needed. Top each crust with your favorite toppings. Bake until the cheese is melted and the muffins are heated through, 15-18 minutes. Remove and let stand for 2 minutes before serving.
