Butter the phyllo dough between layers, place in ramekins, and bake until golden brown. Fill the toasted tartlets with fig jam, walnuts, and soft brie cheese. Return to the oven to bake the cheese. Sprinkle the dessert with pomegranate seeds.

Place 15 mini filo pastry tarts on a baking sheet and bake at 180°C (350°F) until golden brown, 3 to 5 minutes. Fill each tartlet with 1/2 teaspoon of fig jam, top with a 2-cm cube of Brie cheese, and sprinkle with a few chopped walnuts. Return the baking sheet to the oven and continue baking until the cheese begins to melt, about 10 minutes. Top with pomegranate seeds.
