Chocolate Mint Brownie Truffles - A detailed recipe.

Ingredients for the recipe:
- 50 g unsweetened chocolate
- 50 whole mint chocolate candies
- 110 g and 1 tbsp softened butter
- 1 cup of sugar
- 2 eggs
- 0.75 cups premium flour
- 0.25 tsp mint extract
- 30 g finely chopped dark chocolate

Cooking the dish according to the recipe:
- Preheat oven to 160°C. Generously grease a mini muffin tin.
Melt unsweetened chocolate in the microwave. Remove from the microwave and add 8 candies, stirring until completely melted. Let cool slightly.
Using a mixer fitted with a dough hook, combine 110g of butter and sugar. Beat in the eggs one at a time. With the mixer on low speed, slowly pour in the cooled chocolate mixture, beating until combined. Add the flour and mix thoroughly. Scrape down the sides of the bowl with a rubber spatula, add the mint extract, and mix again. - Using a tablespoon or cookie scoop, spoon the batter into the prepared mini muffin pan. Bake until set, 11-13 minutes. Invert the pan to remove the finished muffins, and let them cool.
Combine 25-30 mint chocolate chips, the remaining tablespoon of butter, and chopped dark chocolate. Microwave the mixture until melted and smooth.
Dip the brownie pieces in chocolate, paying particular attention to the cone-shaped top. Let them set for a few minutes. Crush the remaining mint candies and sprinkle them on top. Refrigerate for 10 minutes if you need them to set immediately.
