A stunning pea soup that requires no cooking and is perfect for the summer heat. Green peas are pureed in a blender with vegetable broth, lemon juice, and olive oil and served chilled with chunks of spicy crab meat and finely chopped mint. The mint and lemon give the soup an even more refreshing flavor. Pick over the crab meat first to ensure there are no shell fragments. Serve the pea soup in clear glasses as a stunning appetizer for a family celebration.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Soup

  • 2 cups frozen green peas, thawed
  • 1 can (400 g) of canned vegetable broth
  • 1/4 cup olive oil
  • Juice of 1 lemon

Crab meat

  • 2 tbsp. l. olive oil
  • 1 tbsp sambal oelek (Asian chili sauce)
  • Juice of half a lemon
  • 1 cup fresh lump crab meat, sorted
  • A quarter bunch of mint, finely chopped

Cooking the dish according to the recipe:


  1. Make some soup. Combine the peas and vegetable broth in a blender and blend until smooth. With the blender running, slowly pour in the olive oil until the mixture becomes emulsified. Add half the lemon juice, then refrigerate the soup for 1 hour. Before serving, season with salt to taste and drizzle with the remaining lemon juice.
  2. Prepare the crab meat. In a bowl, combine olive oil, sambal oelek sauce, and lemon juice. Stir in the crab meat and mint and add a pinch of salt. Fill small cups or glasses about three-quarters full with the chilled pea soup. Garnish each serving with 1 heaping tablespoon of spicy crab meat and serve immediately.
