This cocktail is so delicious that the bartenders at GIN BAR, where the drink originated, offer it as a non-alcoholic version, without the addition of mezcal. The Beetlejuice, Beetlejuice, Beetlejuice cocktail is a harmonious combination of sweet and tart beet syrup, lime juice, and ginger beer. Served with a wedge of lime.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 tbsp. sugar
  • 1/3 cup honey
  • 1/3 cup apple cider vinegar
  • 3 large beets, peeled and coarsely chopped
  • 30 ml freshly squeezed lime juice + lime wedges for serving
  • 30 ml mescal
  • 60 ml seltzer water
  • 30 ml ginger beer

Cooking the dish according to the recipe:


  1. Prepare beetroot syrup:

    Combine 1 cup of water, sugar, honey, and vinegar in a small saucepan and bring to a boil. Simmer until the sugar dissolves, about 10 minutes. Add the beets and simmer until tender, about 20 minutes. Strain through a fine-mesh sieve and let the syrup cool.
  2. For each cocktail: Combine 20 ml of beetroot syrup, lime juice, and mezcal in a shaker; shake well. Strain into an ice-filled glass. Top with seltzer water and ginger beer. Garnish with a lime wedge.
