This pie crust produces a delicate, golden-brown crust thanks to a two-stage baking process: first at 220°C for 20 minutes, then at 180°C for another 20-25 minutes.

Dough:

- 3/4 cup shortening
- 1 egg
- 2 tablespoons of water
- 1/2 tbsp vinegar

- Sugar, for sprinkling the surface of the pie
Filling:
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1/2 tsp ground cinnamon
- 1/2 cup water
- 3 cups blueberries
- 1 tbsp fresh lemon juice

Cooking the dish according to the recipe:
- Filling: Combine sugar, cornstarch, cinnamon, and water. Place in a saucepan and heat quickly until thickened. Let cool while you prepare the batter. Once cooled, stir in the blueberries and lemon juice.
- Preheat oven to 220°C.
Mix the flour, sugar, and salt. Cut the shortening. Mix the eggs, water, and vinegar. Add the flour mixture, stirring lightly with a fork. Turn the dough out onto a lightly floured cutting board and knead it with your hands. Divide into 2 separate layers. Line the bottom of a pie pan with one layer of dough. - Pour the filling into a lined pan and spritz with lemon juice. Place the second layer of dough on top, poke holes to allow steam to escape, and shape the edge into a shaped border. Lightly sprinkle the surface with sugar. Place the pie on a baking sheet in the oven for 20 minutes. Reduce the temperature to 180°C and bake for another 20-25 minutes. Let cool, slice, and enjoy!
