Ingredients:

  • 1 tbsp. vegetable oil
  • 1/2 medium onion, finely diced
  • 1 carrot, cut into small cubes
  • 2 stalks of celery, cut into small cubes
  • 2 large potatoes, thoroughly washed and cut into small cubes
  • 250 gr. Italian sausages for frying, remove the shell
  • 1 teaspoon paprika
  • 1 teaspoon chopped garlic
  • 1/2 tsp dried pepper flakes
  • 1 tsp 9% vinegar
  • 4 fresh eggs
  • Salt and freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat oil in a large skillet over medium heat. Add onion, carrot, celery, potato, sausage, paprika, garlic, red pepper, and 1/2 teaspoon salt. Sauté, stirring, until vegetables are tender, about 15 minutes.
  • Step 2
  • Meanwhile, bring a medium saucepan of water to a boil and add vinegar. Crack the egg into a bowl.

    Using a spoon, create a whirlpool in the simmering water and carefully pour in the egg. Cook until the white is set and the yolk is still runny, about 3-5 minutes. Repeat with the remaining eggs.
  • Step 3
  • Divide the vegetables and meat among plates. Top with a poached egg. Sprinkle with salt and pepper.
