Ingredients:
- 1 tbsp. vegetable oil
- 1/2 medium onion, finely diced
- 1 carrot, cut into small cubes
- 2 stalks of celery, cut into small cubes
- 2 large potatoes, thoroughly washed and cut into small cubes
- 250 gr. Italian sausages for frying, remove the shell
- 1 teaspoon paprika
- 1 teaspoon chopped garlic
- 1/2 tsp dried pepper flakes
- 1 tsp 9% vinegar
- 4 fresh eggs
- Salt and freshly ground black pepper

1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.

Preparation:
- Step 1
- Heat oil in a large skillet over medium heat. Add onion, carrot, celery, potato, sausage, paprika, garlic, red pepper, and 1/2 teaspoon salt. Sauté, stirring, until vegetables are tender, about 15 minutes. Step 2
- Meanwhile, bring a medium saucepan of water to a boil and add vinegar. Crack the egg into a bowl.
Using a spoon, create a whirlpool in the simmering water and carefully pour in the egg. Cook until the white is set and the yolk is still runny, about 3-5 minutes. Repeat with the remaining eggs.
Step 3 - Divide the vegetables and meat among plates. Top with a poached egg. Sprinkle with salt and pepper.
