Sweet pickles and the marinade itself add a sweet and sour flavor to Ree Drummond's mashed potato salad. Serve it garnished with hard-boiled eggs and a sprinkle of fresh dill.


Ingredients:

  • 2.2 kg (about 8 medium-sized) potatoes
  • 1.5 cups mayonnaise
  • 4 tbsp mustard
  • 5 green onions, sliced ​​to the dark green part
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon coarse salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp paprika
  • 10 small sweet pickled cucumbers, sliced
  • 2 tbsp marinade
  • 6 hard-boiled eggs, peeled and chopped
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.

1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • Cut the potatoes in half or thirds and boil until soft. Drain. Mash the potatoes with a potato masher or press them through a potato press or food processor for more air.
  • Step 2
  • Mix the potatoes with mayonnaise, mustard, green onions, dill, salt, pepper, paprika, and other seasonings as desired. Add the pickles, marinade, and eggs and taste for seasoning. If needed, add more salt, mustard, or mayonnaise.
