The basic ingredients of a classic potato salad are boiled potatoes, hard-boiled eggs, and a mayonnaise-mustard dressing. The potatoes are typically boiled with the skin on and cut into small pieces unpeeled. Celery stalks, onions, green onions, and fresh herbs add additional flavor. The salad is very filling, tender, and has a pleasant creamy texture. It can be served as a standalone appetizer or as a side dish with meat dishes.


Ingredients:

  • 1.3 kg red potatoes
  • 6 large eggs
  • 1 cup mayonnaise
  • 2 tbsp mustard
  • 2 stalks celery, chopped
  • 3 tbsp. l. chopped parsley
  • 2 chives, chopped
  • 1 white onion, finely chopped
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the potatoes and 2 heaping tablespoons of salt in a large pot of water. Bring to a boil and simmer until the potatoes are tender, 10-15 minutes. Drain, then cut the potatoes into 1/2-inch pieces.
  • Step 2
  • Meanwhile, place the eggs in a large saucepan and cover with water. Bring to a boil, then reduce heat and simmer for about 10 minutes. Drain and run the eggs under cold water to cool. Peel and slice.
  • Step 3
  • In a large bowl, combine the potatoes, mayonnaise, mustard, celery, parsley, chives, white onion, and a pinch of salt and black pepper. Toss to coat the potatoes, then add the hard-boiled eggs. Gently toss the salad, being careful not to mash the eggs.
