Cooking the dish according to the recipe:
- Place the potatoes in a bowl and rinse thoroughly under cold running water. Place them in a medium saucepan and season with salt. Add enough water to completely cover the potatoes. Bring to a boil, reduce heat, and simmer, uncovered, until tender, about 15 minutes.
- Meanwhile, place the peas and onion in a small saucepan, pour in the milk, add the sugar, and place over medium heat. Bring slowly to a boil, reduce the heat, and simmer for 3-4 minutes, until the peas are tender. Turn off the heat and let the contents of the saucepan steep.
- Peel and mash the boiled potatoes while still hot, using a fork or a fine-mesh sieve. Add the warm milk mixture. Add a little butter and season with salt and pepper to taste. Serve with the remaining butter on top.
