Traditional Irish mashed potatoes "Colcannon" - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.4 kg of well-washed potatoes
  • 1 head of cabbage, peeled and finely shredded
  • 225 g butter
  • 1 and 1/4 cups hot milk
  • Ground black pepper
  • 1 piece (450 g) of cooked ham or bacon
  • 4 finely chopped green onions
  • Chopped parsley leaves for garnish

Cooking the dish according to the recipe:


  1. Steam the potatoes in their skins for 30 minutes. Peel them with a knife or fork. Before mashing, chop them with a knife. Mash thoroughly to remove any lumps.

    Add 110 g of butter in pieces. Gradually add the hot milk, stirring constantly. Add a few grinds of black pepper.
  2. Boil the cabbage in unsalted water until it takes on a richer color. Add 2 tablespoons (30 g) of butter to make it more tender. Cover for 2 minutes. Drain thoroughly and return the cabbage to the pan. Chop into small pieces.

    Place the ham in a large saucepan and cover with water. Bring the water to a boil and simmer for 45 minutes until tender. Drain. Remove any fat and cut into small pieces.

    Add cabbage, green onions and ham to the mashed potatoes, stirring gently.

  3. Serve in individual soup bowls. Make a well in the top with a wooden spoon. Place a tablespoon of butter in each well. Sprinkle with parsley.
