Champ – Irish mashed potatoes with green peas – a detailed recipe.

Ingredients for the recipe:
- 900 g peeled and diced potatoes
- 110 g Irish butter
- 1/2 bunch chopped green onions (with bulbs)
- 1 crushed clove of garlic
- 1 cup of milk
- 1/4 cup chopped fresh parsley
- Salt and ground black pepper
- 1 cup boiled fresh young green peas (drain the broth)

Cooking the dish according to the recipe:
- Place the potatoes in a medium saucepan. Cover with salted water and bring to a boil. Reduce heat and simmer until tender. Drain well and return the potatoes to the pan.
- Meanwhile, melt the butter in a small saucepan over medium-high heat. Add the green onions and garlic and cook, stirring, until softened and fragrant, 1.5 minutes. Remove from heat.
- Return the pan with the potatoes to medium-low heat and heat for a minute, shaking the pan. While mashing the potatoes, slowly add the milk. Puree the potatoes until creamy. Add 1/2 of the hot oil with the green onions and mash again until the ingredients are combined. Season with salt and pepper to taste.
Remove the pan from the heat and add the green peas. Transfer to a serving bowl and drizzle with the remaining onion oil. Serve hot.
