When you're craving delicious mashed potatoes without sacrificing your figure, this recipe for a savory imitation of your favorite side dish will come in handy. Instead of high-carb, starchy potatoes, you can use light and juicy cauliflower, and toppings like cream cheese, grated Parmesan, and butter will perfectly disguise it, resulting in a smooth and creamy mashed potato that's just like the real thing. Garlic, chopped chives, and a small pinch of dry chicken bouillon (such as a chicken bouillon cube) will help mask the cauliflower's flavor. If desired, you can roast the garlic and add a little fresh rosemary for an even more wonderful flavor.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.

Ingredients for the recipe:


  • 1 medium head of cauliflower
  • 1 tbsp cream cheese, softened
  • 1/4 tbsp. grated parmesan
  • 0.5 tsp chopped garlic
  • 1/8 tsp dry chicken broth (can be replaced with 0.5 tsp salt)
  • 1/8 tsp freshly ground black pepper
  • 0.5 tsp chopped fresh or dried chives, for serving
  • 3 tablespoons unsalted butter

Cooking the dish according to the recipe:


  1. Place a pot of water over high heat.

    Wash the cauliflower and cut into small pieces. Cook in boiling water for about 6 minutes or until tender. Drain thoroughly; pat the hot cauliflower dry with several layers of paper towels.
  2. Using an immersion blender or food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken broth powder, and pepper until almost smooth.

  3. Sprinkle with chives and serve hot with pats of butter.
