A relish is a sauce made from small pieces of vegetables or fruit. It originates from Indian cuisine, which is famous for its variety of sauces and gravies. Although pickled vegetable relishes are most popular, cherry-lemon relish also goes well with meat dishes.
Serve cherry lemon relish with turkey, chicken, beef, or cheeses for an unusual flavor combination.

In a saucepan, combine the zest of 2 lemons (in wide strips), 1 cup water, 1/2 cup sugar, and a cinnamon stick. Bring to a simmer over medium heat and cook until the zest becomes slightly translucent, about 6 to 8 minutes. Strain. Set the lemon zest and syrup aside; discard the cinnamon stick. Place the zest in a food processor, add 16 oz (700 g) of frozen cherries (defrosted and drained) and a pinch of salt. Process into fine pieces, adding 1/4 to 1/2 cup of the prepared sugar syrup to achieve the desired consistency. Add 1 to 2 teaspoons of lemon juice.
