Cherry Roll "Red Velvet" - a detailed recipe.
Ingredients:
Dough
- 2 tsp almond extract
- 1/2 tsp vanilla extract
- 1/3 cup kefir
- 3 large eggs
- 2 tbsp. cola or cherry juice
- 1.5 cups premium flour
- 2 tablespoons cocoa powder
- 1/2 tsp baking powder
- 1/2 teaspoon baking soda
- 1 cup granulated sugar
- 1 tbsp red food coloring
- 1/2 tsp salt
- Powdered sugar, for dusting
- Butter, for greasing the pan
Filling
- 120 gr. cream cheese, room temperature
- 1.5 cups heavy cream
- 2 tsp almond extract
- 1/3 cup granulated sugar
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:
- Step 1
- Preheat oven to 180°C. Grease a 28 x 43 cm rimmed baking sheet with butter, line with parchment paper and grease again with butter, lightly dust with flour. Step 2
- Prepare cherry syrup: Bring the cherry juice to a boil in a skillet and cook over medium-high heat until reduced to 1/2 cup, about 10 to 12 minutes. Cool. Step 3
- Prepare the cake layer: In a bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. In a separate large bowl, whisk together granulated sugar, vegetable oil, kefir, eggs, red food coloring, almond and vanilla extracts, and cherry syrup.
Add the flour mixture and stir until smooth. Pour the batter onto the prepared baking sheet and bake until the crust is cooked through, about 15 minutes. Remove the crust from the oven and cool for 5 minutes.
Step 4 - Sprinkle a kitchen towel (not terry cloth) with sugar. Invert the cake onto the towel and remove the parchment paper. Trim any uneven edges. Starting from the narrow end, roll the cake into a log, including the towel, and let it cool completely. Step 5
- Prepare the filling: In a bowl, combine the cream cheese, 1/2 cup heavy cream, and almond extract. In a separate bowl, beat 1 cup heavy cream with sugar using a mixer until thick and fluffy. Then carefully fold the whipped cream into the cream cheese. Or make a different filling, using cream cheese. Step 6
- Prepare the roll: Unroll the cooled cake and spread the filling over the entire surface. Then carefully roll it into a log and place it on a serving plate. Dust the cherry red velvet roll with powdered sugar.
