Preparation:

    Step 1
  • Preheat oven to 350°F (175°C). Line a 9 x 13-inch baking dish with foil, leaving a 2-inch overhang on both short sides; spray with cooking spray.
  • Step 2
  • Prepare the cheesecake layer:

In a medium bowl, beat the cream cheese, sugar, and egg with a mixer on medium speed until smooth, 2–3 minutes. Transfer 1/3 cup of the batter to a small bowl and stir in the cocoa powder and red food coloring until smooth; fold in the buttermilk. Set both batters aside.
  • Step 3
  • Prepare the brownie layer:

In a medium saucepan, melt the butter over medium heat. Remove from heat and let cool slightly. Mix the sugar, eggs, and vanilla until smooth. Mix the flour, cocoa powder, salt, and baking powder until smooth.
  • Step 4
  • Spoon the brownie batter into the prepared pan. Top with small spoonfuls of regular cheesecake batter, covering most of the brownie. Spoon the red batter over the entire surface and gently fold the red and white batters together with a skewer.
  • Step 5
  • Bake until a toothpick inserted into the center comes out clean, 35–40 minutes. Transfer to a wire rack and let cool completely in the pan. Remove from the pan by pulling the foil tab. Cut into pieces.
