Ingredients:


Dough
  • 1 cup premium flour
  • 1 tbsp cocoa powder
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • 6 tbsp (90 g) butter, room temperature
  • 3/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 teaspoon red food coloring

1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare cookies: In a bowl, combine flour, cocoa powder, baking soda, and salt. Beat butter, powdered sugar, and vanilla extract with a mixer on medium speed until smooth, about 1 minute.

    Reduce speed to low and, continuing to beat, add the flour mixture in parts, then the food coloring, and mix until smooth.
  • Step 2
  • Place the dough on a lightly floured work surface and knead for a while. Then roll it into a log 25 cm long and 2.5 cm in diameter. Wrap the dough in plastic wrap and place it in the freezer. Freeze the dough until firm, about 2 hours.
  • Step 3
  • Meanwhile, prepare the filling: In a food processor, combine coconut, cream cheese, powdered sugar, salt, and vanilla extract until smooth. Cool.
  • Step 4
  • Preheat oven to 180°C. Line 2 baking sheets with parchment paper. Remove the dough from the freezer and unroll it. Cut the dough into 0.5-1 cm thick slices and place them on the prepared baking sheets, spacing them 2.5 cm apart.

    Place in the oven and bake until the edges are set, 8 to 10 minutes. Cool the cookies on the baking sheets for 2 minutes, then transfer to a serving platter and cool completely.

  • Divide the cookies into equal quantities. Spread 1 teaspoon of filling on the flat side of each cookie. Then top with the remaining cookies.
