Preparation:

    Step 1
  • Line 2 muffin tins (12 muffin tins) with paper liners.

In a medium bowl, sift the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl, using an electric hand mixer, gently beat the vegetable oil, buttermilk, eggs, food coloring, vinegar, and vanilla extract. Add the dry ingredients to the wet ingredients and whisk thoroughly until smooth.
  • Step 2
  • Preheat the oven to 180°C. Divide the batter evenly among the cupcake liners, filling each approximately 2/3 full. Bake for 20-22 minutes, rotating the pan once halfway through. Check for doneness with a toothpick. Remove the cupcakes from the oven and let them cool completely before frosting.
  • Step 3
  • Make the cream cheese frosting: In a large bowl, beat the cream cheese, butter, and vanilla until smooth. Add the powdered sugar and beat on low speed until fully combined. Turn the mixer to high speed and beat until the cream is light and fluffy. More recipes Cream cheese frosting
