Steamed shellfish are considered one of the most delicious and tender seafood delicacies. The bivalve species best suited for steaming is the sand mia. (My arenaria)They can be identified by their fragile shells and long, protruding legs. Since myas accumulate a lot of sand, it's recommended to soak them in salt water for several hours beforehand. Then steam them or cook them in a small amount of seasoned water. Serve the mollusks with melted butter and enjoy their exquisite, delicate flavor.

In a large saucepan, combine 2.5 cups of water, 1/4 onion, 1 bay leaf, 1 quartered celery stalk, and a few peppercorns and bring to a boil. Add 1.5 kg of brushed clams, cover, and simmer for about 10 minutes, until the shells open (discard any that don't open). Strain the liquid into a separate bowl.
When eating, remove the clams from the shell, rinse them in the cooking liquid, and dip them in melted butter. Serve with lemon wedges.
