Ingredients:

  • 330 g king prawns, peeled, gutted and finely chopped
  • 1/3 cup peeled and finely chopped jicama (a root vegetable of the legume family) or water chestnut
  • 36 round dumpling dough rounds, pre-defrosted
  • 1 egg white
  • 2 green onions, finely chopped
  • 1.5 tbsp cornstarch
  • 1.5 tsp. Chinese rice wine or dry sherry
  • 3/4 tsp dark sesame oil
  • Coarse salt
  • 1/2 teaspoon sugar
  • A pinch of ground white pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, lightly beat the egg white. Add the shrimp, jicama, green onions, cornstarch, rice wine, sesame oil, 3/4 teaspoon salt, sugar, and pepper. Stir thoroughly for 1 minute, until the mixture thickens slightly, cover, and refrigerate for 1 hour.
  • Step 2
  • Place one dough ball on a clean surface (cover the others with a damp towel to prevent them from drying out). Stir the shrimp mixture again, then spoon 1 heaping teaspoon of the mixture into the center of the ball.

    Wet your fingers with cold water and moisten the edges of the dumpling. Fold it in half and pinch the edges tightly. Place the finished dumpling on a baking sheet. Cover with a damp towel and form the remaining dumplings.
  • Step 3
  • Pour 0.5 cm of water into a large frying pan and bring to a boil. Place the vareniki in a single layer on the bottom and cook for 5 minutes, until fully cooked. (If the water evaporates, add another 2 tablespoons.) Carefully transfer the vareniki to a serving dish.
  • Step 4
  • Ponzu dipping sauce:
    In a small bowl, combine 3 tablespoons lemon juice ponzu sauce, 1 tsp soy sauce, 1/2 tsp sesame oil and 1 green onion, chopped.
