Potato dumplings (pol. pierogi), used as the base for a salad, is a fairly simple dish made from pre-made ingredients. However, skilled cooks usually avoid using ready-made vareniki and make their own. For the salad, vareniki need to be boiled and dressed with sour cream and apple cider vinegar. You'll appreciate the dish if you take this recipe with you and try making vareniki for a picnic at your country house.

In a large bowl, combine 2 tablespoons each mayonnaise, sour cream, and chopped chives, 1 tablespoon each apple cider vinegar and chopped dill, 1 teaspoon Dijon mustard, and a pinch of salt.
Boil 400g of frozen potato vareniki (mini vareniki are best for this recipe) for 5-10 minutes after they float to the surface, adding 1 cup of frozen green peas. Drain in a colander and rinse under cold water. Drain and add to the dressing; season with salt and pepper. Shake to combine. Chill and serve.
