Steam the couscous with green peas in boiling water, and in a few minutes you'll have a hearty, delicious side dish, ready to be garnished with fresh mint, lemon zest, and olive oil. Its bright, refreshing flavor makes it a wonderful accompaniment to grilled meats, especially lamb or pork. If you forgot to defrost your green peas, steam frozen ones along with the couscous, making this quick dish even quicker.
