Combine 1.5 cups water with 2 grated carrots, 1/4 cup light raisins, 3 tablespoons olive oil, 1 tablespoon red wine vinegar, 1 teaspoon coarse salt, and a pinch of cinnamon and black pepper and bring to a boil.
