Combine 1.5 cups water with 2 grated carrots, 1/4 cup light raisins, 3 tablespoons olive oil, 1 tablespoon red wine vinegar, 1 teaspoon coarse salt, and a pinch of cinnamon and black pepper and bring to a boil. Pour the mixture over 1 cup whole-grain couscous; cover and let simmer for 5 minutes. Then fluff with a fork and add finely chopped parsley.
