This is a great example of how you can make a delicious Thai-style side dish from ready-to-eat ingredients. If you have frozen cooked rice and green peas in the freezer, heat them in coconut oil along with coconut flakes and spices. You get a quick, flavorful pilaf that can be served with fried chicken or eaten as a standalone vegetarian dish.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 tbsp. frozen brown rice
  • 0.5 cup frozen green peas
  • 1/4 cup coconut water

Cooking the dish according to the recipe:


  1. In a saucepan over medium heat, heat 1 teaspoon coconut oil. Add 1/4 cup sweet coconut flakes and a pinch each of red pepper flakes and salt; cook, stirring, for 3 minutes.
  2. Add 3 cups frozen brown rice, 1/2 cup frozen green peas, and 1/4 cup coconut water. Cover, reduce heat, and cook, stirring occasionally, until the rice and peas are heated through. Add some chopped cilantro.
