Make a delicious and healthy meatless spelt pilaf, perfect as a side dish for meat dishes. Spelt is cooked with fried onions and golden raisins, and when ready, top the pilaf with chopped pistachios and fresh herbs.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Cooking the dish according to the recipe:
- In a saucepan over medium heat, sauté 1 finely chopped onion in 2 tablespoons butter for 5-7 minutes; season with coarse salt and black pepper.
- Add 1 cup spelt and 1/4 cup golden raisins; add 2 cups water and 1/2 teaspoon salt. Bring to a boil.
- Cover, reduce heat to medium-low and simmer until the spelt has absorbed all the water, about 35 minutes.
- Stir and sprinkle with finely chopped salted pistachios and fresh parsley.
