This hearty and nutritious salad combines the wonderful nuttiness of spelt with the sweetness of pears, the tangy flavor of celery, and the tartness of an apple cider vinegar vinaigrette. It's incredibly juicy. Serve as an appetizer or side dish with chicken or meat.

Cooking the dish according to the recipe:
- Cook 1 cup of spelt according to package directions. Drain thoroughly and transfer to a large bowl to cool.
