Tender hearts of palm make a delicious base for a sophisticated yet easy-to-make salad. Simply toss them with fresh arugula, chopped celery, and red onion, drizzled with lemon juice and olive oil. To soften the onion's flavor and prevent it from overpowering the other ingredients, soak it briefly in ice water.

Soak 1/4 cup chopped red onion in cold water for 10 minutes, then drain. Combine the onion with 2 cups chopped hearts of palm, 1 cup chopped celery, and a small amount of finely chopped parsley.
