A bowl is a relatively new trend among healthy eating enthusiasts. It's a bowl filled with healthy ingredients that harmoniously combine flavor, color, and texture. Everything in one bowl is a complete, balanced meal. Typically, a bowl is based on slow-burning carbohydrates like grains and porridges, topped with individual mounds of vegetables and protein. Assemble a bowl with spelt, seared salmon, and fresh vegetables. Radishes, avocado, and sugar snap peas are also excellent. Drizzle everything with a dressing of onion, lemon zest, and olive oil. It pairs harmoniously with both fish and fresh vegetables.


Ingredients:

  • 1 lemon
  • 0.5 cup spelt
  • 3 tbsp. l. olive oil
  • 1 salmon fillet weighing 240 g.
  • 1 tbsp. chopped shallots
  • 2 radishes, thinly sliced
  • 0.5 cup sugar snap peas, thinly sliced ​​diagonally
  • 0.5 avocado, thinly sliced
  • Fresh dill for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Remove 1 teaspoon of zest from the lemon and set aside. Cut the lemon in half.
  • Step 2
  • Bring a medium saucepan of salted water to a boil. Add the spelt and cook until tender, 20-25 minutes. Drain and rinse the spelt under cold water.
  • Step 3
  • Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Season the fish with salt and pepper to taste. Place it in the skillet and cook for about 3 minutes on each side, until cooked through. Squeeze the juice of half a lemon over the salmon. Set the fish aside to cool slightly, then flake it with a fork.
  • Step 4
  • Squeeze the juice of the remaining lemon half into a small bowl, add the shallots, reserved lemon zest, and the remaining 2 tablespoons of olive oil and toss to combine. Season with salt and pepper to taste.
  • Step 5
  • Divide the spelt between 2 bowls. Top with the fish, radishes, peas, and avocado and drizzle with the dressing. Sprinkle with dill and serve.
