Rebujito is a traditional Andalusian cocktail made with sherry and lemon soda, a wonderfully refreshing summer drink. This rebujito recipe uses cava, a Spanish sparkling wine, and lemon juice instead of soda, and frozen watermelon cubes instead of regular ice give the cocktail a vibrant, summery flavor.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 watermelon
  • 90 ml fino sherry
  • 30 ml lemon juice
  • 30 ml simple sugar syrup
  • 30 ml of cava

Cooking the dish according to the recipe:


  1. Cut the watermelon flesh into ice cube-sized pieces and freeze on a waxed paper-lined baking sheet for about 2 hours.
  2. Combine sherry, lemon juice, syrup, and ice in a cocktail shaker. Place 3-5 watermelon cubes in a Collins glass (reserve the remaining watermelon cubes for another time). Strain the cocktail over the cubes. Top with cava.
