While chili-lime seasoning is often considered a perfect accompaniment to fish, you'll be surprised at how it complements the flavor of baked radishes. The radishes are halved and baked in the oven with spices until tender. Fresh cilantro complements the vegetables with its vibrant, spicy flavor, and for added crunch, add toasted salted pumpkin seeds before serving. A wonderful summer side dish for meat or fish dishes.


Ingredients:

  • 0.7 kg radishes, cut in half
  • 1 cup cilantro
  • 1 teaspoon chili-lime seasoning
  • 1/3 cup toasted pumpkin seeds
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • On a baking sheet, toss 1 pound halved radishes with 2 tablespoons olive oil, 1 teaspoon chili-lime seasoning, and 1/2 teaspoon salt.

  • Roast in the oven at 220°C, stirring once, until golden brown and soft, 30-35 minutes. Stir in 1 cup of cilantro. Sprinkle with toasted salted pumpkin seeds.
