Large potatoes are baked whole in the microwave, then split, split, and battered with butter. Serve one potato per serving with the meat filling of the popular American sandwich, the Sloppy Joe. This is ground turkey simmered in tomato sauce with carrots, onions, celery, and spices. Simmer the filling while the potatoes are baking, and the whole thing will be ready in less than half an hour. Serve the baked potatoes, sprinkled with grated cheddar, while the filling is still hot, so the cheese melts deliciously.

Ingredients for the recipe:
- 4 Russet Burbank potatoes
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 1 carrot, finely chopped
- 1 stalk celery, finely chopped
- 450 g of ground turkey, 7% fat
- 0.5 cups ketchup
- 1/3 cup sweet chili sauce
- 1 tbsp chili powder
- 1/4 tsp garlic powder
- 0.5 tbsp. grated low-fat cheddar (about 60 g)

Cooking the dish according to the recipe:
- Prick the potatoes several times with a fork; place on a microwave-safe plate and microwave until tender, turning once, about 15 minutes.
- Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, carrot, and celery and cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Add the ground turkey and 1/4 teaspoon each salt and black pepper; cook, breaking up the meat with a wooden spoon, until darkened throughout, about 5 minutes. Stir in the ketchup, chili sauce, 1/2 cup water, chili powder and garlic powder; continue to simmer until the meat is cooked through, another 3-5 minutes.
- Slit the baked potatoes lengthwise down the sides, fold in 1 tablespoon of butter, and gently fluff the flesh with a fork. Top with the turkey mixture and sprinkle with cheese while the filling is still hot.
